The FOODTECH unit comprises specialists in agricultural and food engineering, biology, biotechnology and chemistry, who study the relationships between the structure and function of food in order to improve its quality, nutritional profile and functionality. It also promotes the utilisation of by-products from the agri-food industry to develop new, sustainable products and materials with improved functional properties. The unit also studies the interaction between food and the human body, including metabolic response, the bioavailability of nutrients and the modulation of the gut microbiome, with the aim of contributing to the development of healthier, personalised and more sustainable diets.
